added minimal demo for faster option testing + Makefile changes

In the process I reorganized the Makefile
- renamed manual to doc (mainly because I’m too lazy to write `make
manual`)
- fixed missing dependency in for DOC_PDF
- sorted macros (directories, files, commands)
